Farm-Fresh Tips for a Rack of Lamb

A rack of lamb is tender, flavorful, and beautifully elegant—perfect for a special dinner or holiday table. With its delicate marbling and classic presentation, it’s one of the finest cuts of lamb. Here’s how we prepare it at Fields of Athenry.

Bring to Room Temp – Let the rack sit out for 30–45 minutes before cooking for even heat.
Season Generously – Rub with kosher salt, cracked pepper, garlic, and fresh herbs like rosemary or thyme.
Sear for a Crust – Brown the rack in a hot skillet for 2–3 minutes per side to develop rich flavor.
Roast Gently – Cook in a 400°F oven, fat side up, until the internal temperature reaches your preferred temperature.
Cook to Temperature – Medium-rare (125–130°F) is ideal for tenderness and flavor.
Rest Before Carving – Let rest 10 minutes before slicing between the bones into elegant chops.
