Bring to Room Temp – Let sausages sit out for 15–20 minutes before cooking for even heat.
Cook Low & Slow First – Start sausages over medium heat (or indirect heat on the grill) to cook them through without bursting.
Finish with a Sear – Turn up the heat or move over direct flame at the end for a crisp, golden-brown exterior.
Check the Temp – Lamb sausage is best cooked to 160°F for while staying juicy.
