Sear Hot & Fast – Grill or pan-sear over high heat, 3–4 minutes per side, to build a rich, golden crust.
Finish Gently – Move to indirect heat or a 375°F oven until the center reaches your preferred temperature.
Cook to Medium-Rare – Sirloin shines at 130–135°F for tenderness and juiciness, but it also holds up well at medium.
Rest Before Slicing – Let rest 5–10 minutes, then slice against the grain for the most tender bite.
