Farm-Fresh Tips for a Perfect Delmonico Steak

Delmonico steaks are a true classic—thick, juicy, and full of rich beef flavor. Whether grilled or pan-seared, they make an unforgettable centerpiece. Here’s how we prepare them at Fields of Athenry.

Bring to Room Temp – Let steaks rest on the counter for 30 minutes before cooking for even heat.
Season Simply – A generous rub of kosher salt and cracked pepper lets the natural flavor shine.
Sear for Crust – Start over high heat (grill or cast iron skillet) for a caramelized, golden-brown crust.
Finish Gently – Move to indirect heat or a 375°F oven until the center reaches your preferred finished temperature.
Cook to Temperature – Medium-rare (130–135°F) is the sweet spot for tenderness and flavor.
Rest Before Serving – Let rest 5–10 minutes so juices redistribute with every bite.
