Bring to Room Temp – Take it out of the fridge 30 minutes before cooking for even heat.
Cook Hot & Fast – Grill or sear over very high heat, 2–3 minutes per side, for a deep char.
Don’t Overcook – Skirt steak is best at medium-rare (130–135°F) to keep it juicy.
