Bring to Room Temp – Let the roast sit out for 1 hour before cooking so it heats evenly.
Season Generously – Rub all over with kosher salt, cracked pepper, garlic, rosemary, thyme, and olive oil. For added flavor, stuff the center with seasoned bread or rice dressing.
Sear or Start Hot – Roast at 450°F for 15–20 minutes to create a golden crust.
Finish Low & Slow – Reduce the oven to 325°F and continue roasting until the internal temperature reaches 145°F.
Rest Before Carving – Tent loosely with foil and rest for 15–20 minutes before slicing between the bones.
