Pat Them Dry – Start by drying drumsticks with paper towels for crispier skin.
Season Like You Mean It – Use kosher salt, cracked pepper, and your favorite herbs, spices, or marinades.
Sear or Sizzle First – Whether grilling or pan-searing, start with high heat to get golden, crispy skin.
Finish Low & Slow – Move to indirect heat (or a lower oven temp) to cook through without drying out.
Cook to 175°F – Dark meat is best when tender—175°F gives you juicy, fall-off-the-bone goodness.
Rest Before Serving – Give them 5–10 minutes to let juices settle for maximum flavor.
