Farm-Fresh Tips for Korean-Style Short Ribs

Korean-style short ribs are thin-cut across the bone, making them perfect for fast marinating and quick grilling. Bursting with flavor, they’re a favorite for barbecues and family-style meals. Here’s how we prepare them at Fields of Athenry.

Choose the Right Cut – Korean short ribs are cut thin (about ¼-inch) across the bone for quick cooking.
Marinate for Flavor – A classic marinade of soy sauce, garlic, ginger, sesame oil, and a touch of sweetness (like honey or brown sugar) works beautifully. Let them soak at least 4 hours or overnight.
Bring to Room Temp – Remove from the fridge 30 minutes before grilling for even cooking.
Grill Hot & Fast – Cook over medium-high heat, about 2–3 minutes per side, until caramelized and lightly charred.
Don’t Overcook – Because they’re thin, they’re best enjoyed medium to medium-well—juicy, but not dry.
Serve Family-Style – Pair with rice, kimchi, or fresh vegetables for an authentic, flavorful meal.
