London broil is a lean cut that shines when marinated, grilled, and sliced thin. With bold flavor and beautiful presentation, it’s a crowd-pleaser when cooked just right. Here’s how we prepare it at Fields of Athenry.

Marinate for Flavor – London broil benefits from a long marinade (at least 4 hours or overnight) with acid, herbs, and spices to tenderize the meat.
Bring to Room Temp – Take it out of the fridge 30–60 minutes before cooking for even heat.
Sear Hot & Fast – Grill or broil over high heat, 4–6 minutes per side, for a nice crust.
Aim for Medium-Rare – Pull at 130–135°F for the best tenderness and juiciness.
Rest Before Slicing – Let it rest 10 minutes so the juices redistribute.
Slice Against the Grain – Cut into thin slices across the grain for maximum tenderness.
